Cook
  • Works independently, planning, preparing, and/or coordinating the preparation of entire meals. On a regular and recurring basis, coordinates the work of lower graded cooks engaged in a variety of standard cooking operations simultaneously at one or more work centers.
  • Participates fully in the development and testing of standardized recipes for both regular diets and modified diets with complex restrictions. He/she carves vegetables and fruits as garnishes for food platters and dishes. He/she will slice meat items by hand conforming to specific size requirements or weight specifications.
  • Distributes food to the line tray set up area to meet the established meal service schedules. Portions food items into proper serving containers utilizing proper established portions sizes. Assures projected yields by monitoring designated portion size during tray service.
  • Knows accepted cooking methods to preserve flavor, color, and the nutritive value of foods. Food is prepared and seasoned appropriately to enhance palatability, but adhere to dietary modifications.
  • Routinely monitors food temperatures during preparation and service. Correctly labels, dates and stores food items and leftovers.
  • Processes last minute menu changes including number of servings required and adapts preparation methods in relation to equipment available. Assembles items for taste panel in compliance with established policy.
  • Uses equipment and utensils required in the full range of quality cooking and blast chilling. Understands variations in oven temperatures or deep fat fryers. Has complete understanding of the operation, use, care, adjustment, and proper cleaning of equipment and utensils.
  • Maintains an uncluttered clean and sanitary work area by following the "clean as you go" concept.
  • In some situations, may assist Supervisor in ordering subsistence and supplies in accordance with weekly menu requirements and maintains rotation of food inventories to prevent spoilage.
  • Discusses and reports all system problems to Supervisors, Cook Supervisor or Supervisory Dietitian. Notifies Clinical Nutrition Staff of any problems related to nutritional care.
  • Performs other duties as assigned.


Work Schedule: Monday through Friday 5:30 a.m. to 2:00 p.m. with the possibility of occasional weekends and holidays.

Physical Requirements/Working Conditions: The nature of the work is performed in a food service area in a hospital setting and may require the use of appropriate clothing. This work requires continuous standing, walking and frequent stooping, reaching, pushing, pulling, and bending and working in an office setting. Frequently lifts or moves objects weighing up to 50 pounds unassisted, occasionally lifts or moves objects weighing over 50 pounds with assistance of lifting devices or other coworkers. The selected individual may be performing such work as scrubbing large cooking utensils. Sweeping and mopping floors are performed.
