Recipe: Pineapple-papaya Parfaits (1173 hits)

2 cups papaya, peeled, cubed
2 tbsp lime juice
1/2 tsp lime zest
2 tbsp water
2 tbsp sugar
1 cup fresh or frozen raspberries
4 bananas, sliced
4 cups pineapple pieces
1 cup kiwi fruit, peeled, sliced


1. Combine papaya pieces, lime juice, lime zest, water, and sugar in a food processor or blender. Blend 15 to 30 seconds or until smooth. Transfer to a small bowl and set aside.

2. Layer 6 parfait glasses or dessert cups with raspberries, banana slices, and pineapple pieces. Spoon papaya mixture over fruit.

3. To serve, top each parfait with sliced kiwi.

4. Makes 6 servings.
