you should not receive an email when you reply to a thread , only when someone else replies... you can unsubscribe to threads by clicking the unsubscribe link in the email

And you can also uncheck the "Subscribe to thread" when you quote a message BUT it's automatically rechecked when you quote again within the same thread. So you gotta uncheck it everytime.
