Eternal Universe: No Creator?

Why can't we assume that the universe is eternal... that it has no beginning and end, and thus no "creator" as the term is commonly used. I mean, don't the conservation laws for both energy and mass stipulate that energy (mass) can neither be created nor destroyed?
