Here's What's Cooking: BLACK BEAN CORN SALAD

1 cup frozen, whole-kernel corn
1/4 cup water
1/2 (15-oz) can low-sodium black beans, drained
1/2 cup chopped green bell pepper
1/2 cup chopped red bell pepper
1/3 cup chopped red onion
2 tbsp salsa
1/4 cup chopped cilantro
2 tbsp lime juice
1/2 tsp cumin
1/2 tsp salt-free Mrs. Dash® Lemon Pepper Seasoning Blend
1. In a small saucepan bring the corn and water to a boil. Cook for 1 minute. Remove from heat.
Drain water and set aside to cool to room temperature.
2.In a large bowl combine the black beans, peppers, onion, salsa, cilantro, lime juice, cumin, and salt-free seasoning.
3. Add the corn to the bean mixture and mix well.
4. Makes 4 servings.
